Recipe 4 diabetics as well


WALNUT SNAILS (for diabetics as well)

 INGREDIENTS
200 grams of dark wheat flour
200 grams of white wheat flour
220 grams of soft margarine for baking
1 egg
100 grams of maple syrup
10 grams of vanilla sugar
150 grams of ground walnuts
½ teaspoon of cinnamon
Grated lemon peel (1 lemon)
 
 
Preparation
 
 
Mix all the ingredients and knead it for about 15 minutes.

Then put dough to rest in refrigerator for one hour. After that turn on oven and preheat it at 180ºC / 356ºF electric oven or 165ºC / 329ºF convection oven.

Meanwhile make some snails (start as you would do walnut croissants and then swirl it). Then put walnut snails on a baking paper and bake it from 15 to 20 minutes.

NOTE!

Maple syrup is very healthy because it contains a lot of antioxidants and more than 50 active/nutritional ingredients, which act against inflammation, prevents development of diabetes and cardiovascular disease.

Walnuts must be rough ground, this makes cookies even more tastier/healthier.
A glass of white wine can greatly complement walnut snails.

Recipe 4 diabetics


SNOW BALLS (even for diabetics)


INGREDIENTS:
  m 4 dcl of milk
m tablespoons of strong/sharp flour
m 15 dkg of powdered sugar or (2 dkg of liquid artificial sweetener, called STEVIA)
  m 20 dkg of ground coconut flour

DECORATION INGREDIENTS:
   m roasted hazelnuts or almonds
               m 10 dkg of coconut flour

STEP 1
Put milk on a stove, after it boils you put it on a side then carefully add 3 tablespoons of strong/sharp flour and whisk it to prevent lumps. Put the same mass back on a stove and whisk it (for 1 or 2 minutes) until it thickens. Then put the thickened mass on the side and whisk it for a minute or two. Then leave it to cool down (but not too much it’s still has to be lukewarm for the next step).

STEP 2
To lukewarm mass add 15 dkg of powdered sugar or 2 dkg of liquid artificial sweetener (use this one for diabetics), stir until the sugar dissolves a little and add 20 dkg of ground coconut flour. Now stir the mass very well.

STEP 3
Put the mass for 1 hour in the refrigerator. Prepare a roasted hazelnuts or almonds and 10 dkg of coconut flour for rolling the balls in it.


STEP 4
From the cooled mass you can make:
 
mSNOW BALLS (take a little of coconut mass into your hands and roll it in a shape of a ball then put a hazelnut or an almond in the middle, then roll the ball in coconut flour), after that put it in a refrigerator for hour or a few.
m From the same mass you can make VARIOUS FIGURINES (fruits, animals, etc.) with children.





TIPS
m In coconut mass you can also add a teaspoon of soft margarine and a little bit of coconut syrup or liquor.
m Instead of milk you can use powdered milk.
